Quick And Healthy Grab On The Go Breakfast

Being a parent, we all have shared the experience of the alarm ringing, hitting the snooze button a few times and then waking up in a panic to get the kids out the door for school, let alone get ourselves ready for the day. The worst part is when you piece together an unhealthy lunch or throw a poptart for the kids to eat “breakfast” on the way out. Then the guilt sets in that an unhealthy habit has started and the most important meal of the day is not actually a real meal at all.

We would love to be prepared for everything, but the reality of being a parent is you are going to fall short some days and make mistakes often. Well, dump that guilt and spend an hour on Sunday preparing for the week with all of these easy and healthy options to fuel that precious child’s mind.

 

FROZEN YOGURT FRUIT BITES:

  • 6 ingredients -

    • 1 cup of fresh strawberries

    • 1 tbsp of honey

    • 1 tsp of olive oil

    • ⅓ cup of unsweetened coconut

    • 1 cup of granola (you can also use other nuts, graham crackers, pecans or vanilla wafers)

    • ½ cup of vanilla Greek yogurt

  • Directions - Start by blending together the granola, coconut, honey and olive oil as the base. Use non-stick cooking spray over a mini cupcake tin and press the crust into the holes and set aside. Next, blend the strawberries and fold in some Greek yogurt. Then pour in the strawberry and yogurt mixture over your crust and place them in the freezer for 30 minutes. 

 

FROZEN BANANA YOGURT STICKS:

  • 4 ingredients -

    • 3 bananas

    • ¾ cup of vanilla yogurt

    • ½ cup of granola

    • 6 popsicle sticks

  • Directions - Peel the bananas, cut in half and insert a popsicle stick to each. Then cover the bananas in yogurt and sprinkle crushed granola over the yogurt. Place them on wax paper in the freezer for approximately 2 hours or until the yogurt has hardened.

 

EGG CUPS:

  • 7 ingredients -

    • 3 cups of broccoli

    • 1 cup of cheddar cheese

    • 2 eggs

    • 12 Ritz crackers

    • ½ tsp of garlic powder

    • ¼ tsp of salt

    • ¼ tsp of pepper

  • Directions - Begin by cooking, draining and chopping the broccoli. Next, preheat the oven to 375F while cracking the eggs, shredding the cheese and crushing the crackers. and place in a bowl with the broccoli. Toss everything in a bowl together, add in the seasonings, grease a cupcake tin and pour the mixture in. Bake for 15 minutes.

 

PEANUT BUTTER CEREAL BITES:

  • 4 ingredients -

    • ⅔ cup of honey

    • ⅔ cup of peanut butter

    • ½ tsp of vanilla extract

    • 4 cups of Cheerios

  • Directions - Heat the peanut butter, honey and vanilla extract together in a pot over the stove until mixed smoothly but stir consistently and be careful not to burn it. Once mixed smoothly, remove from heat and add in the Cheerios. Once coated, spoon out bite sized pieces onto wax paper and let them cool.

 

OATMEAL BITES:

  • 4 ingredients -

    • 1 ¼ cup of oats

    • 1 tsp of cinnamon

    • ½ cup of peanut butter

    • ¾ cup of plain Greek yogurt

  • Directions - It’s so simple! Mix the oats, peanut butter, cinnamon and yogurt together. Then scoop out bite sized pieces, roll into a ball and whola! For extra flavor, add in some fresh blueberries.
